There are a few basic principles which I follow while cooking. Some of you may object to a few of these--but, with all due respect, you're probably too concerned about your figure, and not sufficiently concerned about making your mouth happy.
Declaration of Principles:
1: Fat is good. More fat is better. Just ask Paula. Yeah, what now? But seriously, Americans don't know how to use oil properly. Oils release SO many delicious flavors (and nutrients! hah!), so why not add an extra tablespoon or two? Then, once you get used to that, start experimenting with butter, bacon fat, and rendered lamb fat. (That last one takes a bit more work--and a lamb. But it's well worth the trouble.)
2: Pepper is better than salt. If you disagree, you probably like bland food. Don't you? Yeah, I thought so.
3: Cilantro is good.
